How's that for a post title? : ) I just couldn't resist!
Friday I had not one, but two toddlers in the house! Let me tell you, it was actually easier than just the one. They played together so well...I loved it! In fact, while they played, I made them a treat...homemade goldfish crackers. It turns out, they're delicious and easy to make...if you like to bake, you can easily make these.
I used this recipe posted by The Iowa Farmer's Wife. Here are my quick notes:
- My batch made approximately 200 crackers or about 4 cups.
- I rolled the dough to 1/8-inch thickness and cut them out with a 1-1/2 inch biscuit cutter, then cut each circle into quarters. Put them as close together as you can on the cookie sheet, without letting them touch. I baked them in two batches.
- I buy cheddar cheese in large blocks, grate and freeze it. This does not work for this recipe. The moisture in the cheese and the little bit of butter helps hold the crackers together so I had to measure out my cheese and let it come to room temperature first.
- I only used a small pinch of salt because I was concerned that the cheese would make them too salty. But they definitely need more salt...I was even thinking that you could sprinkle them with some coarse sea salt or Himalayan salt for added nutrients.
- The next time I make this, I'm going to try adding some herbs from my garden. Basil crackers, anyone? : )
Overall, I loved them and so did my toddlers! I'll definitely make these again because they were soooo easy and I don't have to feel guilty about my kiddo snacking on crackers!

Where is the fun fish shape?
I don't have (or want) a fish cookie cutter...just using what I had on hand! BUT I have some cute little Christmas cookie cutters that I'll use in December. I'm thinking that'll be one of my items for family baking day. :)
